4th Season for COYA Monte Carlo 

And so, COYA Monte-Carlo has just launched its 4th season starting last Thursday lunchtime, April 22nd , 2021, and having switched almost immediately to lunch & dinner mode. 

COYA Monte-Carlo’s sea view terrace, is reopening in a new green setting. The big novelty of this season: Chef Victoria Vallenilla Gallardo has taken over the management of the kitchens of COYA Monte-Carlo, bringing with her Venezuelan and Caribbean influences.

COYA Monte-Carlo and its kitchens are now orchestrated by Chef Victoria Vallenilla who takes control of the fusion restaurant, bringing her Venezuelan inspirations to it. Originally from Venezuela, Victoria Vallenilla acquired the art of cooking “Monte-Carlo” style, at the Hôtel Hermitage Monte-Carlo for 3 years, before embarking on the COYA Monte-Carlo adventure when the restaurant opened. She was driven by her desire to return to her roots, and that of magnifying the flavours of her childhood. This talented chef, with skills as broad as her smile, evolves from Sous-Chef of the restaurant to Chef, bringing a modern and tasty touch to the kitchen.

And for lunch and dinner in complete serenity, COYA Monte-Carlo has set up for the safety of its customers and employees the Monte-Carlo Cares program, from the Monte-Carlo Société des Bains de Mer Group, certified by Bureau Veritas, so that the most exclusive destination in Europe is also the safest.
