This year, the Pastry Chef Fabrice Didier has outdone himself once again. As the Christmas season approaches, the Chef and his team have crafted a culinary masterpiece that is sure to delight the senses!

At Fairmont Monte Carlo, the yule log is adorned in a vibrant red coat inspired by Santa Claus. This highly anticipated family table specialty is delicately shaped like a snowflake, symbolizing the softness and elegance of the winter season. Captivating and warm, this yule log is a tribute to the magic of Christmas.

The snow sparkles, covering the streets in white, while red—symbolizing warmth, love, and joy— brings the perfect festive harmony embodied by the snowflake.

The yule log is composed of a sylla honey and bergamot sponge, with subtle aromatic notes and an incomparable flavor, offering a soft and fragrant base. A crunchy almond praline adds a delicate texture, while pieces of candied citron bring a fruity and tangy note. The bergamot cream and almond mousse complete this creation, delivering a balanced and refined tasting experience.
